Lipid droplets, membrane-bound packages of lipids, have been one of our cells’ least studied components. Lipids are compounds that don’t dissolve in water, such as fats, oils, hormones, and parts of cell membranes. But recently, more scientists have begun probing the mysteries that surround them and finding fascinating results.
